16 oz plain flour 2 tsp baking powder 1/2 tsp bicarb pinch salt 4 oz butter, softened 7 oz sugar 2 eggs 3 very ripe bananas, mashed with a dash of water 1 tsp vanilla extract ( I mean extract, not that awful essence!) chopped walnuts (about half a small bag) Grease a 9x5x3" loaf tin ( or use non stick). Sift flour, baking powder & bicarb. Cream butter & sugar, add eggs, beating well. Mix in bananas & vanilla. Stir in flour mixture & walnuts. Bake in 190c oven for about 35 minutes. Gorgeous sliced and spread with butter, mmmm!. You can also use mixture to make 12 large muffins instead of a loaf. |

good, might try this myself or send to the maid for immediate action. Seems like big chunks of the year we have been throwing over ripe bananas into the bin (gifts and loots from locally) - just can't eat them fast enough. |

I hate throwing food out. I also do a lovely banana caramel ice cream, no machine required. Will post recipe at some point!. |

There is a banana & chocolate cake that I have done a few (too many i think) which is something i can do with my son with minimal mess, everything gets smashed, mixed and oven(ed) without having to get hands dirty ... |
