It was in 2001 that a dream came true for Nicos Charalambos, Owner, Executive Chef and Sommelier of the
Colosseum Restaurant, when he bestowed his culinary skills on Paphos. Hardly a small acorn now, but 7 years later he has the pleasure of introducing you to Colosseum II. The wine in question is a dry white called Frascati Superiore Collepapa, and is a blend of Trebbiano, Greco and Malvasia grapes grown in the Lazio region of Central Italy. The producer descibes this wine as "fresh and harmonious, with scents of peach" and " .. delicious with salads, pasta or white meat ..". This notably popular wine is worth approximately €20 :
