Post subject:  Chicken Curry

For all of you who are having curry withdrawl symptons, this recipe was given to me by a girl I used to work with in Lond about 30 years ago - who was Cypriot!!!! I have used this since then and all our friends who consider themselves curry gurus thinks it is great.

4 chicken breasts (cubed)
I large chopped onion
1 can plum tomatoes
1/4lb creamed coconut
4 cloves crushed garlic
1" grated fresh ginger
6 cloves
2 cinnamon sticks
1 tsp ground cumin
2 tsp ground coriander
3/4 tsp chilli powder (less if you like it mild)
1 tsp turmeric
2 chicken oxos

Fry oil in a little oil until golden and add creamed coconut. Mix the cumin, coriander, chilli powder and turmeric in 1/2 cup of water and add to the pan and cook for a couple of minutes. Add the tomatoes, cloves, harlic, ginger and cinnamon, keep stirring and cook for about 15 minutes. Add more water if the mixture becomes too thick. Add the chicken stock cubes and the chicken, bring to the boil and cook (uncovered) for 1-1/2 hours. Add more water if required (up to 1/2 cup).

Pilau Rice:
1 cup easy cook rice
4 cloves
2 cinnamon sticks
4 cardomon pods (split)

1 tsp turmeric
2 cups water

Put everything into pan, bring to boil and simmer until all the water has been absorbed. Remove whole spices and serve.

The sauce basis can be used to add anything you like - adjust cooking times accordingly. Enjoy!!!!!

Hope you have a extra large pan to make your curry up in Trish :D

Tom you spoil a good indian curry with chips (although I love a good Chinese curry and chips).

Jean - you can walk to my place from yours so no need for a lift and you can come too!

Molly - after Jean's party we will arrange.

The rest of you will have to wait until the weather is a bit warmer as haven't got room for all of you at once, but maybe could do a buffet curry night, but would have to charge to cover the price of cooking for everyone.

Bob - I say nothing.................
